Baked sweet potatoes with Feta cheese and ruccola

Struggling how to manage a healthy dinner or appetizer in a simple way?

Ingredients

4-5 Sweet potatoes (depends on hunger J)

salt, pepper

thyme, rosemary

1 spoon olive oil

Feta cheese other salty cheese

pumpkin oil

ruccola

Heat the oven to 180 degrees Celsius. Peel sweet potatoes and cut them into long pieces. Spice them up with pepper , rosemary, thyme and then sprinkle with olive oil. Be careful with the salt as it is served with salty cheese 🙂 I normally bake them first under aluminum foil, then I remove it bake it for a while. From the very beginning in the oven, it should take apriximately 45 minutes until softened. If you cut the potatoes, you should be able to do it with a fork. And then its more about your Foodstyling skills. Add the cheese and ruccola to the top. Finally, pour pumpkin oil over it. Voilá, we can taste it.
